I’ll admit – I’m a salmon person. I’ll eat salmon in any way shape or form. However, in the nine days, I’m always looking for different fish dishes and fun was to flavor them. This baked parmesan tilapia is a winner. It’s something to add to the dinner rotation, and it’s the kind of recipe where you probably have all the ingredients at home (besides the fish that is).
Preheat oven to 350
Place fillets on a baking sheet lined with foil paper and sprayed with nonstick cooking spray. Season top of fillets generously with paprika, garlic powder, seasoning salt and black pepper. Bake for 10 minutes.
Combine mayonnaise, parmesan, breadcrumbs and butter in a medium-size bowl.
When fish comes out of the oven switch the oven to Low Broil.
Top the fish with a layer of the breadcrumb mixture, pressing it gently into the fish to keep it in place. Sprinkle with onion flakes.
Broil for 3-5 minutes or until the topping is golden.
Garnish with freshly chopped parsley or other desired herbs.
Note: Watch the broil carefully. Some ovens’ broil run really hot!
